Poultry meat is a highly esteemed product among consumers. However, the emphasis on increasing body weight has led to a rise in the proportion of rapidly shrinking fibers, adversely affecting the quality and shelf life of poultry meat. With a growing awareness of dietetics among consumers, there is an increasing challenge to produce chicken meat that is not only free of antibiotics but also beneficial for dietary and health reasons. Biogenic amines (BA) can serve as indicators of meat freshness and quality. While they play vital roles in the body, excessive consumption of BA can have toxic and carcinogenic effects. The objective of this study was to examine the impact of supplementing feed with garlic extract and ß-alanine (ß-Ala) on the formation of BA and amino acid (AA) levels in the breast and leg muscles of chickens stored under aerobic chilling conditions. The muscles were obtained from chickens fed with garlic extract and ß-Ala in quantities of 0.5 and 2% for each additive, as well as 0.5 and 2% of their combination. Analyses were conducted on d 1, 3, 5, 7, and 10 of storage. ß-Ala supplementation increased the proportion of this AA in breast (P < 0.01) and leg muscles (P < 0.01), along with a rise in the proportion of nonessential AA (NEAA; sum of aspartic, aspartic acid, glutamic, glutamic acid, serine, ß-Ala, and proline) (P < 0.01). The levels of BA changed during storage in breast and leg muscles (P < 0.001). The applied diet significantly influenced the formation of putrescine (P = 0.030), phenylethylamine (P = 0.003), agmatine (P = 0.025), and total BA (P < 0.001) in breast muscles. On the 10 d of storage, the breast muscles exhibited the lowest BA index (BAI) in the group, with a diet supplemented with 0.5% garlic extract and 0.5% ß-Ala (P < 0.05). The leg muscles showed a similar BA trend as the breast muscles. These supplements may be utilized in production to augment the protein content of chicken muscles and potentially decrease the BAI index during meat storage.

Variability in shell structure is an evolutionary mechanism in birds that enables them to adapt to specific environmental conditions. This variability may also occur within the same species under the influence of individual indicators, such as the age or health status of females. While interspecies variation is quite obvious and easy to interpret, the reasons for intraspecies variation remain unclear. In this study, we examined the ultra- and microstructure of guinea fowl eggshells to identify the association between variations in shell structure and hatchability outcomes. We analyzed the visual differences between shells with low (L), intermediate (I), and high (H) external porosity using scale invariant feature transform analysis with NaturePatternMatch software. We found that the external pore image was closely related to the overall porosity of the shell before incubation. The total pore area, total porosity, and diffusion index (GH2O) were highest in group H shells (P < 0.001). Posthatching shells were characterized by an increased diameter and total surface area, decreased pore number (P < 0.001), as well as shortened mammillary layer (P < 0.001) and decreased total consumption of mammillary knobs (P < 0.001). The porosity indices of posthatching H shells had intermediate values between L and I. Although the effect of shell structure parameters on hatching was not confirmed, we assumed that all categories (L, I, and H) of shells were ideal for incubation. This suggests that the shell structure adapts to the metabolic rate of developing embryos; however, differences in shell structure affect the duration of incubation and synchronization of hatching. Both L and H shells showed delayed and prolonged hatching. Therefore, we recommended that guinea fowl eggs with different external porosity parameters should be incubated separately for better hatching synchronization. Differences in GH2O between L, I, and H eggs suggest that the shell porosity characteristics of guinea fowl eggs may be a key determinant of the rate of water loss during storage before incubation.

Herein, we conducted a comparative study on the embryotoxicity of ochratoxin A (OTA) and its diastereomer 2'R-ochratoxin A (2'R-OTA) under in ovo conditions, as well as assess the in vitro embryotoxicity of these substances together with ochratoxin B and α-ochratoxin, using chicken (Gallus gallus domesticus) embryo cell lines. In ovo tests involved egg incubation of 8 different groups (i.e., control "0"-no puncture or injection (standard incubation); "00"-punctured eggs without injection; "OTA 0.25," "OTA 0.50," "OTA 0.75," "2'R-OTA 0.25," "2'R-OTA 0.50," "2'R-OTA 0.75"-eggs containing OTA or 2'R-OTA at 0.25, 0.50, and 0.75 µg/egg concentration, respectively). The results confirmed OTA's impact on early and late embryo mortality, where chick hatchability decreased with increasing toxin dosage. Both OTA and 2'R-OTA demonstrated embryotoxicity, however, in the case of the highest OTA diastereomer dose, nearly 11% higher chick hatchability was observed compared with the group that received OTA. 2'R-OTA dosage did not reduce parameters chick quality compared to chicks hatched from control group eggs. OTA concentrations were higher than 2'R-OTA detected in chicken organs such as liver and kidney, whereas 2'R-OTA concentrations were higher in blood serum and heart. The presented studies highlighted the differences in the ability to accumulate toxins in certain organs, which, to a certain extent, may affect the potential toxicity on individual organs. Additionally, during in vitro tests, when assessing the cytotoxic effects of OTA and its analogues toward the chicken embryonic cell line in an MTT assay, the cell metabolic activity was inhibited to a comparable extent at 27-times higher concentration of 2'R-OTA than OTA (0.24 µM). Also, comparably lower toxicity was attributed to the remaining OTA derivatives.

Despite the existing research into the gut microbiome of meat chickens, the associations between gut microbiome composition, its activity and chicken outdoor ranging frequency remain unexplored. The aim of this study was to determine the gut microbiota composition, activity and metabolic products in chickens of 2 different lines and 3 ranging profiles. Sixty non-beak trimmed birds, either Sasso or Green-legged Partridge were housed with access to outdoor ranges from wk. 5 to 10 of age. Outdoor ranges were video recorded to obtain frequencies of the birds' range use. The information about relative abundance of selected bacterial groups in the ceca including Lactobacillus spp., E. coli, Bifidobacterium spp., and Clostridium spp. was obtained with the PCR method. Gut microbiota activity was assessed based on the glycolytic activity of bacterial enzymes including, α-glucosidase, ß-glucosidase, α-galactosidase, ß-galactosidase, and ß-glucuronidase as well as based on the concentration of short-chain fatty acids (SCFA) in the caecal digesta. Statistical analysis was conducted by generalized linear mixed models, applying the breed and ranging profile as fixed effects and pen as a random factor. The lowest relative abundance of Bifidobacterium spp. was found in the cecal content of indoor-preferring Sasso birds (0.01 ± 0.001), as compared to all other birds in the experiment (ranging from 0.03 ± 0.01 to 0.11 ± 0.07; P = 0.0002). The lowest relative abundance of E. coli was identified for all outdoor-preferring birds and indoor- preferring Sasso birds (0.01 ± 0.001; P = 0.0087). Cecal activity of: α-glucosidase, ß-glucuronidase and ß-galactosidase was higher in Green-legged Partridges, as compared to Sasso (P = 0.013; P = 0.008; P = 0.004). Valeric acid concentrations were higher in moderate Green-legged Partridges than in Sasso of the same ranging profile (2.03 ± 0.16 vs. 1.5 ± 0.17; 0.016). The majority of the current results confirmed an effect of genotype and ranging profile on the various analyzed parameters. In outdoor-preferring birds, the consumption of pasture originating feed sources as a supplement to the indoor accessible cereal-based diet likely caused the positive effects on the birds' microbial profile.

The unique structure of the egg allows for efficient reproduction on land. Although the functions of the egg are ensured by the concomitant cooperation of all its structures, the eggshell also plays a significant role. Apart from maintaining an aqueous environment within the egg along with controlled gas exchange, the color and pigmentation pattern of eggshell contributes to identification and protection. As a result of all these functions, the structure, shape, and pigmentation of eggshell greatly vary across the class of birds, and understanding these three variability-determining factors may aid in better interpretation of evolutionary mechanisms. In this study, we analyzed for the first time the structure, mineral composition, and characteristics of the pigmentation of blackbird (Turdus merula) and song thrush (Turdus philomelos) eggshells. The shell of blackbird eggs is much thicker compared to the shell of song thrush eggs which is due to a much thicker crystalline and palisade layers. In both species, strongly elongated mammillary knobs are observed, which create a large space between the mineralized shell and the egg membranes. The blackbird egg shell has a higher water vapor conductivity which is due to the larger diameter of the circle and the surface area of individual pores. The primary compound entering the mineral composition of the shell in both species is CaCO3 however, the thrush egg shells contained more Mg in all layers except the crystalline layer, and S in the crystalline and palisade layers. The two species clearly differ in the size and distribution of pigment spots on the eggshell. We suppose that the differences in shell structure and pigmentation presented in this study may in the future provide a basis for explaining the reasons for the much lower reproductive efficiency of song thrush compared to blackbird.

Poultry meat is a source of many important nutrients, micro- and macro-elements, and biologically active substances. During meat storage, many physicochemical changes take place, also affecting the content of biologically active substances, including biogenic amines.They are formed as a result of three processes: decarboxylation of amino acids by microorganisms, reductive amination, and transamination of aldehydes and ketones, and as a result of activity of body tissues. Excessive consumption of biogenic amines shows toxic properties. The increasing consumption of poultry meat and the lack of established limits for biogenic amine content is a major challenge for scientists, producers, and consumer organisations, which have not yet established limits for biogenic amine content in meat (including poultry meat). Analyses of biogenic amine content in meat account for less than 10% of scientific papers, which raises the scope of the problem of limiting biogenic amines in meat. Among the methods of amine reduction are methods of destroying or reducing microorganisms' high hydrostatic pressure (HHP), ozonisation, radiation, or the use of essential oils.

Optimal development of the gut is important for nutrient absorption and for poultry to resist diseases. The aim of the study was to compare gastrointestinal tract morphometrics, small intestine microstructure, as well as the amount of pasture matter and feed ingested by the birds with outdoor access presenting either an outdoor-preferring, moderate-outdoor or indoor-preferring ranging profile. Sixty non-beak trimmed birds per strain: broiler hybrid Sasso and Polish indigenous green-legged partridge were housed from week 5 to 10 in groups of 10, under conditions of EU organic meat chicken production. Pens with outdoor ranges were video recorded, to obtain frequencies of the birds' range use. Statistical analysis was conducted applying generalized linear mixed models, applying the ranging profile as a fixed effect and pen as a random factor. The weight of the pasture matter in bird crops was the highest in moderate-outdoor profiled green-legged partridges, as compared to other ranging profiles (p = 0.04). In Sasso, villi in the small intestines were significantly higher in the outdoor-preferring compared to indoor-preferring profiled birds (p = 0.04), while their area was larger in the outdoor-preferring Sasso birds (p = 0.01). The level of development of the gastrointestinal tract and its content may be a potential indicator of the birds' ranging profile and forage consumption.

In this paper, numerical simulations of the EN 12767 test procedure for a vehicle-lighting pole crash are presented. A representative soil-vehicle-lighting pole model is first developed. The Geo Metro vehicle model is used, and significant attention is given to representing the soil and its interaction with the traffic pole. Soil is represented using smoothed particle hydrodynamics (SPH) coupled with finite elements (FEs). A parametric study is carried out to investigate the key factors influencing the outcomes and consequently the estimation of the occupant safety levels during crash scenario described in EN 12767. First, a sensitivity study of lighting pole mesh is conducted As a result, the optimal mesh size is used for further studies regarding physical parameters such as soil properties and friction coefficient in vehicle-pole interfaces. Friction and mesh size are found to have a considerable influence on the acceleration severity index (ASI), theoretical head impact velocity (THIV), post-impact velocity and vehicle behavior during the lighting pole crash scenario.

This study analyzed the influence of an aviary system, in comparison with battery cages, on rearing and reproduction of parent-stock (PS) laying-type chickens. ISA Brown PS chicks were reared for 16 wk in battery cages or in an aviary system. Chickens reared in cages were kept there throughout the rearing period, whereas those reared in the aviary were released after 7 wk. The remaining housing conditions were similar in cages and the aviary. Body weight (BW, g), feed intake (FI, g/birds/d), and mortality (%) of birds were monitored during rearing. After the rearing period, the chickens were transferred to 4 litter poultry houses: flock C (in cages) to poultry houses C1 and C2 (total: 2,076 cockerels and 20,450 pullets); flock A (in aviary) to poultry houses A1 and A2 (total: 1,542 cockerels and 16,962 pullets). During the period of reproduction (48 wk), egg production (%), hatching egg production (%), waste egg (%) and litter egg production (%), feed conversion ratio (FCR, g) and water intake (mL) per laid egg, hatching egg, and hatched chick, mortality (week/%), and BW at 17 wk and after reaching 50% laying performance were monitored. Furthermore, during incubation, fertilization rate (%), hatchability (%), and chick quality were recorded. The results showed that aviary rearing was associated with lower FI and higher mortality of chicks up to 16 wk of age. The following effects were also observed for aviary rearing during reproduction: the average egg and hatching egg production were higher, while waste and litter egg production were lower; FCR per laid egg, hatching egg, and the number of hatched chicks were poorer; and water intake for the production of 1 hatching egg and 1 hatched chick was lower. In the case of flocks A, higher mortality and BW at 17 wk of age were recorded for both sexes. They were characterized by higher relative egg fertilization, but lower hatchability due to the higher share of unhatched eggs. No influence of PS flock rearing system on chick quality was observed. The obtained results indicate that the aviary rearing system can be recommended for PS laying-type flocks. However, future research should consider the impact of a different diet having higher energy concentration on PS flocks reared in aviaries and develop methods for counteracting higher mortality in these systems. This is particularly significant for roosters because too few roosters in flock may contribute to lower egg fertilization and higher embryonic mortality.

In this study, we analyzed the parent stock of ISA Brown hens reared in closed and open aviary (CA and OA, respectively) sections with regard to the productive performance of hens, hatchability, and quality of chicks. The flocks were reared (1,570 cocks and 17,515 hens) for 16 wk in a three-level aviary system. On the 7th wk of rearing, half of the birds (OA group of birds) were allowed to leave the section and use half of the area of the poultry house and to use all levels. The remaining half of the birds were kept in the CA section for the entire duration of rearing. After the duration of rearing, the birds were moved to 2 neighboring production poultry houses (OA = 680 cocks and 8,126 hens; CA = 685 cocks and 8,133 hens). Reproduction was performed in a litter system in accordance with the norms for parent stock of laying hens. During the production cycle (53 wk), laying performance, feed conversion ratio, water consumption, and mortality were analyzed. On 27th, 37th, and 49th wk of production, the following analysis was performed: rate of fertilization (%), rate of hatching (%), and quality of chick. In accordance with the results, birds in OA flock required less amount of feed (P < 0.001) and water (P = 0.020) to produce a laid egg, a hatching egg (respectively: P < 0.001; P = 0.009), and a chick (both P < 0.001) in comparison with the birds in CA flock. In addition, a lower number of litter eggs were found in the OA flock (P < 0.001). Mean laying production, production of hatching eggs, and number of waste eggs did not depend on the flock rearing system (P > 0.05); however, a combined analysis of all these parameters using multivariate analysis of variance demonstrated a better (P < 0.001) result for OA flock than that of CA flock. Rate of fertilization, rate of hatching, and quality of chicks did not depend on the flock rearing system (P > 0.05). In summary, it is possible to rear parent ISA Brown hens in open sections of aviary system without the fear of subsequent deterioration of indicators of future egg production.

In this study, we aimed to perform structural and proteomic analysis of the vitelline membrane (VM) of two species birds belonging to the family Turdidae: blackbird (Turdus merula) and song thrush (Turdus philomelos). We performed structural analyses using scanning electron microscopy. The VM proteins were identified and compared to the best-known chicken VM proteins. According to our results, VM of both species has a typical three-layered structure: the outer layer, inner layer, and the continuous membrane between them. An unusual observation was the finding of "convexity" formed by the inner layer in blackbird. The role of these convex structures is not known, but they can be typical for the species and can be used in their identification. In addition, we identified two proteins in the VM of both species of birds, of which U3KEZ1 FICAL was not previously identified in any other bird species, and the U3JXV8 FICAL protein was confirmed only once in cockatiel parrot VM. The function of these proteins is not exactly known, but their structure shows similarities to the SERPIN proteins that are involved in microbiological defense, i.e., they are immune proteins. This study contributes to the current knowledge about the structure and composition of proteins of VM, especially because similar analyses have never been performed for Turdidae family. Knowledge of the structure and specific proteins of blackbird and song thrush VM can be beneficial in research on ecology and bird biology and also helpful in developing noninvasive and nongenetic identification methods.

Despite consumers' belief that access to an outdoor range improves chicken welfare, still little is known about whether this is true and whether individual ranging profiles relate to the birds' welfare. The aim of the present study was to identify and compare welfare issues of the traditional broiler hybrid Sasso and the Polish heritage chicken Green-legged Partridge, having outdoor access, and examine if the birds' welfare status was associated with the ranging profile: outdoor-preferring, moderate-outdoor, and indoor-preferring. In August 2018, 60 non-beak trimmed birds per genetic strain were housed in groups of 10 from weeks 5 to 10, under conditions exceeding EU requirements of organic meat chicken production. Each pen had access to an individual outdoor range that was video-recorded continuously to obtain frequencies of individual birds' use of the ranges. Plumage condition, comb pecking wounds, skin injuries, dirtiness, toe damage, eye pathologies, footpad dermatitis, hock burns, respiratory infections, diarrhea, and walking difficulties were assessed at the end of the experiment. Statistical analysis was conducted applying generalized linear mixed models, with binomial distribution and logit link using SAS software, applying breed and ranging profile as fixed factors and their interaction, with pen as random factor. A tendency for more respiratory infections was observed in Sasso birds from each ranging profile, as compared to matching ranging profiles presented by Green-legged Partridges (outdoor-preferring: P = 0.0012; moderate-outdoor: P < 0.0001; and indoor-preferring: P = 0.0247). Indoor-preferring Green-legged Partridges tended to present more respiratory infections, as compared to the 2 other ranging profiles within the breed (outdoor-preferring: P = 0.0291; moderate-outdoor: P = 0.0448). Regardless of the breed, toe damages were more frequent in indoor-preferring birds, as compared to other ranging profiles (P = 0.017). It remains unknown whether the use of outdoor areas prevents development of welfare issues or if birds with a suboptimal welfare condition become indoor-preferring individuals.

Of all the known oviparous taxa, female birds lay the most diverse types of eggs that differ in terms of shape, shell pigmentation, and shell structure. The pigmentation of the shell, the weight of the egg, and the composition of the yolk correlate with environmental conditions and the needs of the developing embryos. In this study, we analyzed the structure and protein composition of the vitelline membrane (VM) of ring-necked pheasant, gray partridge, cockatiel parrot, and domestic pigeon eggs. We found that the VM structure is characteristic of each species and varies depending on whether the species is precocial (ring-necked pheasant and gray partridge) or superaltrical (cockatiel parrot and domestic pigeon). We hypothesize that a multilayer structure of VM is necessary to counteract the aging process of the egg. The multilayer structure of VM is only found in species with a large number of eggs in one clutch and is characterized by a long incubation period. An interesting discovery of this study is the three-layered VM of pheasant and partridge eggs. This shows that the formation of individual layers of VM in specific sections of the hen's reproductive system is not confirmed in other species. The number of protein fractions varied between 19 and 23, with a molecular weight ranging from 15 to 250 kDa, depending on the species. The number of proteins identified in the VM of the study birds' eggs is as follows: chicken-14, ring-necked pheasant-7, gray partridge-10, cockatiel parrot-6, and domestic pigeon-23. The highest number of species-specific proteins (21) was detected in the VM of domestic pigeon. This study is the first to present the structure and protein composition in the VM of ring-necked pheasant, gray partridge, cockatiel parrot, and domestic pigeon eggs. In addition, we analyzed the relationship between the hatching specification of birds and the structure of the VM.

Thus people are deprived of the opportunity to benefit from the huge diversity of eggs offered by nature. Poultry eggs can vary in their color of albumen and yolk, smell, taste and texture. In this study, sighted and blind people were employed for sensory evaluation with the aim of determining the preferences of consumers toward hard-boiled and scrambled eggs of different species of birds, and whether the appearance of these eggs has an effect on the perception of other sensory impressions. RESULTS: Sighted people differently evaluated the texture of both boiled and scrambled eggs as compared with blind people. This was mainly because blind people largely used their sense of touch for evaluation. All other attributes of boiled eggs were evaluated similarly by both groups of panelists, whereas those of scrambled eggs were evaluated differently. CONCLUSION: The obtained results unequivocally demonstrated that differences in taste of scrambled eggs when served hot are easier to evaluate than those of boiled eggs. On the basis of ranking by the sensory panel, it was established that eggs of birds belonging to the order Galliformes are more preferred by consumers than those of duck and goose. By contrast, eggs of ostrich and emu are characterized by unfavorable sensory profiles; moreover, the albumen of boiled ostrich eggs has an unsightly appearance. © 2019 Society of Chemical Industry.

We studied the changes in morphological, geometric, densitometric, and mechanical parameters of the femur and tibia during 56 D of rearing chickens with different growth rates. Ten femur and tibia were collected from fast-growing chickens (FG) and 2 types of medium-growing chickens (MGH and MGGP) immediately after hatching (0 D) and on 7, 14, 21, 35, 42, 49, and 56 D of life. The bone parameters of chickens across all genetic groups were found to be similar on 0 D, with exceptions of lower percentage contribution of bone weight (BW) in FG chickens (P < 0.05), lower total bone volume in MGGP chickens (P < 0.05), and lower maximum elastic strength in MGH chickens (P < 0.05). The bones developed in FG chickens were longer and wider; however, an increase in bone mineral density (BMD) between 42 and 49 D was not observed. The BMD value in FG chickens on 56 D was comparable to that in MGH chickens (P = 0.089) and significantly lower than that in MGGP chickens (P = 0.021). Mean relative wall thickness, despite longer and thicker bones in FG chickens, was comparable and often lower than that of MGH and MGGP chickens. In conclusion, the results showed that medium-growing chickens could be reared for up to 56 D without the risk of any growth impairment due to problems associated with deterioration of pelvic limb bone quality.

Visual assessment is one of the key criteria in the sensory evaluation of foods. The appearance of food products may affect their perception by other senses, sometimes giving a false picture of their quality. A true assessment of such sensory attributes as aroma, taste, tenderness, and juiciness, which are components of the overall liking of food, without the use of instrumental methods is feasible only by blind people. We have advanced a hypothesis that blindness may modify the impressions perceived through other senses used in food evaluation. To confirm this hypothesis, a sensory testing of cooked breast and leg meat from various poultry species was conducted by normal sighted and blind panelists aged from 18 to 26 years. It has been demonstrated that the lack of sight is compensated by other senses, the intensified perception of which enables a more precise sensory evaluation of food in terms of such parameters as the aroma, tenderness and juiciness. Thus, blind people can be recommended as panelists evaluating the sensory profile of food products. Scores given by the sensory panel allowed the conclusion that the most desirable poultry meat was BM of broiler chicken and capon, followed by Guinea fowl. Lower scores were given by the panelists to meat of water fowl (goose, duck), whereas the lowest ones were assigned to cooked ostrich meat.

OBJECTIVE: This article discusses differences between a side impact procedure described in United Nations/Economic Commission for Europe (UN/ECE) Regulation 129 and scenarios observed in real-world cases. METHODS: Numerical simulations of side impact tests utilizing different boundary conditions are used to compare the severity of the Regulation 129 test and the other tests with different kinematics of child restraint systems (CRSs). In the simulations, the authors use a validated finite element (FE) model of real-world CRSs together with a fully deformable numerical model of the Q3 anthropomorphic test device (ATD) by Humanetics Innovative Solution, Inc. RESULTS: The comparison of 5 selected cases is based on the head injury criterion (HIC) index. Numerical investigations reveal that the presence of oblique velocity components or the way in which the CRS is mounted to the test bench seat fixture is among the significant factors influencing ATD kinematics. The results of analyses show that the side impact test procedure is very sensitive to these parameters. A side impact setup defined in Regulation 129 may minimize the effects of the impact. CONCLUSIONS: It is demonstrated that an artificial anchorage in the Regulation 129 test does not account for a rotation of the CRS, which should appear in the case of a realistic anchorage. Therefore, the adopted procedure generates the smallest HIC value, which is at the level of the far-side impact scenario where there are no obstacles. It is also shown that the presence of nonlateral acceleration components challenges the quality of a CRS and its headrest much more than a pure lateral setup.

The levels of 26 mycotoxins were determined in 147 samples of the grain of cereals cultivated in five regions of Poland during the 2014 growing season. The HPLC-HRMS (time-of-flight) analytical technique was used. An analytical procedure to simultaneously determine 26 mycotoxins in grain was developed, tested and verified. Samples from eastern and southern Poland were more contaminated with mycotoxins than the samples from northern and western Poland. Toxins produced by Fusarium fungi were the main contaminants found. Some deoxynivalenol (DON) was found in 100% of the tested samples of wheat (Osiny, Borusowa, Werbkowice), triticale, winter barley and oats, while the maximum permissible DON level (as defined in the EU Commission Regulation No. 1881/2006) was exceeded in 10 samples. Zearalenone (ZEN), DON metabolites and enniatins were also commonly found. The presence of mycotoxins in grain reflected the prevailing weather conditions during the plant flowering/earing stages, which were favorable for the development of blight. Among all investigated wheat genotypes, cv. Fidelius was the least contaminated, while Bamberka, Forkida and Kampana were the most contaminated. However, the single-factor ANOVA analysis of variance did not reveal (at a statistical significance level α = 0.05) any differences between levels of mycotoxins in individual genotypes. Triticale was the most contaminated grain among all of the tested varieties. ZEN, DON and the sum of 3-acetyldexynivalenol and 15-acetyldeoxynivalenol (3- and 15-ADON) were found in 100% of the tested triticale samples at concentrations within the 4-86, 196-1326 and 36-374 µg·kg(-1) range, respectively. Of particular concern was the fact that some "emerging mycotoxins" (enniatins) (in addition to commonly-known and legally-regulated mycotoxins) were also found in the tested triticale samples (enniatin B (Enn-B), enniatin B1 (Enn-B1), enniatin A-1 (Enn-A1), 100% of samples, and enniatin A (Enn-A), 70% of samples). Depending on the toxin, they were found at levels between 8 and 3328 µg·kg(-1).
